Times have changed, and what was once a no-no to eat saturated fat, today there is a distinction between good saturated fat and bad saturated fat. Coconut oil is, although it is high in saturated fat, is mostly comprised of lauric acid, which raises the cholesterol level by raising high-density lipoprotein (HDL) cholesterol. In layperson's term, HDL is the "good cholesterol" that is moved into the liver and expelled from your body. Whatever the body does not use is extracted and converted to glycogen as required for energy, and the unneeded oil is then excreted directly and not stored. The glycogen can also be used directly for energy, which is why it is so beneficial for diabetics.

But further, the way the body uses coconut oil as energy, and as a result, the body increases its metabolism. According to Dr. Fife, the more that you need to lose weight, the greater your rate of burning fat will be when using coconut oil. A study shows that metabolism increases by 48% when one uses coconut oil, and even greater for obese person. The metabolism maintains a great rate for a period of 24 hours and burns calories and manage weight. According to Dr. Fife, if an obese person just replace all of the oil with coconut oil, he or she can lose 36lbs per year. That's just incredible.

The article from a McGill study called Cooking oil to fight fat and cholesterol points to the benefits of MCT ("medium chain triglyceride"), one of which is coconut oil. One interesting fact is that those who used MCT had lowered their cholesterol by 13 percent versus those who merely took olive oil, the latter group of which 4.5 percent. Until now, olive oil has been known to be the best oil to fight cholesterol, according to Dr. Peter Jones, a professor at McGill’s School of Dietetics and Human Nutrition in Montreal (Canada).

Furthermore, because the body craves fat, a diet with coconut oil will diminish the craving of other food.
